This is a first for us… a farm blended coffee of natural and washed processing. Natural coffees are dynamic in flavor. The process of allowing the fruit to dry and ferment around the seed inside can result in intense sweetness and acidity. It can also cross over the line into unpleasant sourness. The process of removing the fruit and using a short controlled fermentation mitigates the risk of over-ferment but can also narrow the potential range of flavors a coffee might be capable of showcasing. By blending these processes Finca San Juan has captured the best of both worlds; bright and fruity but crisp with clarity of flavor.

Our approach with this coffee has been to apply heat gently so as to maintain the delicate top-notes of the natural processed Gesha variety. We are pretty excited about the result. The cup is bursting with aromas of grape soda and hibiscus which carry through each sip.
